Description
Cansi (kansi in Tagalog orthography) is the Ilonggo version of bulalo or boiled bone-in beef shank. The main difference is cansi contains batuan, an ingredient found only in Bacolod. When added to cansi, the result is a mildly sour broth. Bacolod City is particularly famous for Cansi. It’s an iconic ilonggo dish that is now available in Cebu.
