HISTORY OF PONCIANA'S KITCHEN:
"The business started in 1981 when Cecilia and her husband found themselves owing seven months' rent on their apartment in La Loma, Quezon City, where they lived with their six children. Cecilia decided to pawn her ring and earrings for P1,000 that summer and started offering Palabok and Halo-Halo right in their aparment. Customers loved them, and when the rainy season came, she offered barbeque. In November of that same year she started serving goto, tokwa't baboy and hamburgers, and soon people started visiting the apartment with no name, having heard about it's delicious food. Later, even office workers and medical representatives were trooping to this place that customers started referring to variously as Katorse (after the youngest of Cecilia's three daughter, who was in high school then), Beauty (after all three daughters), Three Sisters, Apartment, Lutong Bahay and Tatlong Maria.
In the last quarter of 1991, Cecilia's eldest son Manuel, seeing the many people patronizing his mother's food, started looking for a suitable place for a restaurant. He saw a good one on Retiro and Pao, also in La Loma, and it wasn't long before they moved there. In 1993 they transferred to a bigger place that could accomodate 70 people on Retiro (now NS Amoranto) and Mayon, and finally gave it a name, Ponciana's Kitchen in memory of Cecilia's mother from Nueva Ecija"
